This project was completed at Disney's Yacht and Beach Resort during July 2009. The horses are made of inedible material for structure, then covered with coating chocolate, modeling chocolate and other decorating mediums. Five horses total complete the herd which are placed atop a gingerbread carousel in the lobby during the Holiday season.
Thank you for visiting my online portfolio. My name is Jacqueline and I've been in the field of baking and pastry arts since 2005. I began my work at The Center of Applied Technology North in Severn, MD before moving to Hyde Park, NY to study at The Culinary Institute of America until December 2009, graduating with an Associates in Baking and Pastry. For my internship, I traveled to Orlando, Florida and worked for Disney's Boardwalk and Disney's Yacht and Beach Club Resort. I maintained a seasonal employment status until 2010 and now have begun a new leg in my studies.
From Fall 2008 to Spring 2011, I attended SUNY Duchess Community College studying photography, graphic design, color theory and drawing. This greatly broadened my abilities in decorating specifically.
Recently, I moved to Crested Butte, CO and have begun special occasion cake decorating again. More photos of work and examples of cake will come and pardon the dust while I continue to update this blog. As you can see, it did lay dormant for a while. I currently work as a Distiller for Montanya Rum, which is what brought me out to this town.
